Ingredients
- 4 ears fresh corn on the cob
- 2 cups cherry tomatoes, halved
- 1 cup fresh cilantro, chopped
- 1/4 cup lime juice (about 2 limes)
- 1/4 cup extra virgin olive oil
- 1/2 cup feta cheese, crumbled
- 1 small red onion, thinly sliced
Instructions
- 1. Shuck the corn and remove silk. Rinse cherry tomatoes and pat dry. Finely chop cilantro, reserving some for garnish.
- 2. Preheat grill to medium heat. Grill corn for 10-15 minutes until charred; let cool before cutting off kernels.
- 3. In a large bowl, mix grilled corn kernels, halved cherry tomatoes, chopped cilantro, lime juice, and olive oil.
- 4. Gently fold in crumbled feta cheese and sliced red onion.
- 5. Taste and adjust seasoning as desired.
