  • 1 cup cherry tomatoes, halved

  • 1 cup bell peppers (mixed colors), diced
  • 1/2 cup black olives, sliced
  • 1/4 cup extra virgin olive oil
  • 3 tbsp balsamic vinegar

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. Chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
  3. In a large bowl, combine the cooled pasta with the chopped vegetables and black olives.
  4. In a separate bowl or jar, whisk together olive oil, balsamic vinegar, dried herbs, salt, and pepper.
  5. Pour the dressing over the pasta mixture and toss until well combined.
