  • 8 oz fresh button or cremini mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup full-fat sour cream
  • 2 cups low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp olive oil

Instructions

  1. Prepare the ingredients by slicing beef, cleaning mushrooms, chopping onion, and mincing garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the beef strips until browned on all sides (about 3 minutes). Remove from pan and set aside.
  3. In the same skillet, add more oil if needed and sauté onions and mushrooms until soft (about 5 minutes). Stir in minced garlic for an additional minute.
  4. Pour in beef broth and Worcestershire sauce; stir to combine and bring to a simmer.
  5. Reduce heat and stir in sour cream until fully incorporated. Simmer for another couple of minutes.
  6. Return seared beef to skillet; stir to coat in sauce and heat through for a few more minutes.
  7. Serve over egg noodles or rice as desired.
