- 2 pounds Yukon Gold potatoes
- 6 strips bacon, cooked and crumbled
- 1 cup sharp cheddar cheese, shredded
- 1 cup sour cream
- ½ cup mayonnaise
- ¼ cup green onions, chopped
- Salt and pepper to taste
Instructions
- Wash and peel (if preferred) the potatoes. Cut them into bite-sized chunks and place in a large pot covered with cold water. Add salt, bring to a boil, then reduce heat and simmer for 10–15 minutes until fork-tender. Drain and cool.
- Cook bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble.
- In a bowl, combine sour cream and mayonnaise; season with salt and pepper to taste.
- Once cooled, gently fold potatoes into the dressing mixture along with crumbled bacon, cheese, and green onions.
- Cover tightly and refrigerate for at least one hour before serving.
- Stir before serving; garnish with extra green onions if desired.
