- 1 cup favorite BBQ sauce
- 4 cups mixed salad greens (romaine, spinach, arugula)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (thinly sliced)
- 1 small red onion (thinly sliced)
- 1 cup shredded cheddar cheese
- ½ cup crispy bacon bits (optional)
Instructions
- Preheat grill to medium-high heat. Season chicken breasts with salt and pepper, grill for 6-7 minutes per side until internal temperature reaches 165°F (75°C). Remove and let rest.
- While chicken rests, chop salad greens and slice tomatoes and cucumbers. Soak red onion slices in cold water for 10 minutes to reduce sharpness.
- In a large bowl, combine salad greens, tomatoes, cucumbers, and red onions; toss gently.
- Slice rested chicken into strips and place on top of the vegetable mix.
- Drizzle BBQ sauce over the salad, sprinkle with cheddar cheese and bacon bits if using.
