  • 34 lbs chuck roast
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tbsp extra virgin olive oil
  • 1 large onion, cut into wedges
  • 4 carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 4 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 2 sprigs fresh thyme

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Season the chuck roast with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat and sear the roast for about five minutes on each side until golden brown. Remove and set aside.
  3. In the same pot, sauté onions, carrots, celery, and garlic for five minutes until softened.
  4. Deglaze the pot with 1 cup of beef broth while scraping up browned bits.
  5. Return the roast to the pot along with remaining broth, Worcestershire sauce, and thyme. Bring to a simmer.
  6. Cover and transfer to the oven. Cook for three hours or until fork-tender.
  7. Slice against the grain and serve with vegetables drizzled in pan juices.
