- 3–4 lbs chuck roast
- 2 tsp salt
- 1 tsp pepper
- 2 tbsp extra virgin olive oil
- 1 large onion, cut into wedges
- 4 carrots, peeled and chopped
- 2 stalks celery, chopped
- 4 garlic cloves, minced
- 2 cups low-sodium beef broth
- 1 tbsp Worcestershire sauce
- 2 sprigs fresh thyme
Instructions
- Preheat oven to 300°F (150°C).
- Season the chuck roast with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat and sear the roast for about five minutes on each side until golden brown. Remove and set aside.
- In the same pot, sauté onions, carrots, celery, and garlic for five minutes until softened.
- Deglaze the pot with 1 cup of beef broth while scraping up browned bits.
- Return the roast to the pot along with remaining broth, Worcestershire sauce, and thyme. Bring to a simmer.
- Cover and transfer to the oven. Cook for three hours or until fork-tender.
- Slice against the grain and serve with vegetables drizzled in pan juices.
