- 2 cups low-sodium beef broth
- 1 can (14.5 oz) diced tomatoes, no sugar added

- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat. Add a splash of olive oil and sauté the chopped onion until translucent (about 5 minutes). Add minced garlic and cook for another minute.
- Increase the heat slightly, add the ground beef, and cook until browned (6-8 minutes). Drain excess fat if necessary.

- Add orzo pasta to the skillet and stir well. Simmer until the orzo is tender (about 10 minutes), stirring occasionally.
- Once cooked through and most broth is absorbed, remove from heat and stir in grated Parmesan cheese until melted.
- Serve immediately, garnished with extra Parmesan if desired.
