  • ½ cup cream cheese (full-fat)
  • 2 green onions (sliced thinly)
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp Japanese mayonnaise

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Rinse sushi rice under cold water until clear. Cook according to package instructions, then mix in rice vinegar once slightly cooled.
  3. Season salmon fillets with salt and pepper, bake on a parchment-lined sheet for 15-20 minutes until flaky.
  4. In a bowl, mix cream cheese, mayonnaise, soy sauce, and green onions until smooth.
  5. In the baking dish, spread sushi rice as the base layer, flake salmon on top, then dollop the creamy mixture evenly.
