  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup BBQ sauce (store-bought or homemade)
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper

Instructions

  1. Rinse the chicken breasts under cold water and pat dry. Season generously with salt and pepper.
  2. In a large skillet, heat a splash of oil over medium heat. Sauté the chopped onion until translucent, then add minced garlic and cook until fragrant.
  3. Place seasoned chicken breasts in the skillet on top of the onions. Pour in BBQ sauce and chicken broth to coat.
  4. Cover the skillet with a lid and simmer on low heat for about 30 minutes or bake in an oven preheated to 375°F (190°C).
  5. Once cooked through, shred the chicken using two forks, return it to the skillet, and stir to combine with the sauce.
