  • 1 can (20 oz) crushed pineapple, well-drained
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add one egg and mix well. Gradually add flour and baking powder until a soft dough forms.
  3. Press two-thirds of the dough into the bottom of the prepared pan and bake for about 10 minutes until slightly golden.
  4. In another bowl, mix the drained pineapple with remaining sugar and one beaten egg. Pour this filling over the pre-baked crust.
  5. Crumble remaining dough over the pineapple filling.
  6. Bake for an additional 30-35 minutes until golden brown on top. Allow to cool before slicing.
