  • 12 baby potatoes (about 1 lb)
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup crispy bacon bits
  • ½ cup sour cream
  • 2 tbsp chopped chives or green onions

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash the baby potatoes thoroughly and pat them dry. Poke each potato several times with a fork.
  3. Drizzle with olive oil and sprinkle with salt and pepper, then place on the baking sheet.
