  • 1 cup panko breadcrumbs
  • 1/2 cup pineapple juice
  • 2 green onions, chopped
  • 1/4 cup sweet soy sauce (or teriyaki sauce)
  • 1 cup pineapple chunks (fresh or canned)
  • 2 tbsp rice vinegar
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, panko breadcrumbs, pineapple juice, chopped green onions, salt, and pepper; mix well.
  3. Form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Bake for about 20 minutes until golden brown and cooked through; broil for an extra minute if desired.
  5. While baking, simmer the sweet soy sauce, pineapple chunks, rice vinegar, and garlic powder in a saucepan until combined.
