  • 2 large yellow onions, sliced
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • 1 bay leaf
  • 1 cup shredded Gruyère cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Sear the chuck roast: Season with salt and pepper. Heat olive oil in a pan over medium-high heat and sear the roast on all sides until browned (about 3 minutes per side).
  2. Caramelize the onions: In the same pan, add sliced onions and sauté over medium heat for about 15-20 minutes until golden brown.
  3. Assemble: In a slow cooker, place half of the caramelized onions at the bottom, add the seared roast, sprinkle thyme and bay leaf, then top with remaining onions. Pour beef broth over everything.
  4. Cook: Cover and cook on low for 8 hours (or high for 4 hours) until meat is fork-tender.
  5. Add cheese: During the last few minutes of cooking, sprinkle shredded Gruyère cheese on top and let it melt.
  6. Serve: Plate the pot roast with gravy and serve alongside mashed potatoes or crusty bread.
