- 2 large yellow onions, sliced
- 4 cups low-sodium beef broth
- 2 tsp fresh thyme (or 1 tsp dried thyme)
- 1 bay leaf
- 1 cup shredded Gruyère cheese

- 2 tbsp olive oil
Instructions
- Sear the chuck roast: Season with salt and pepper. Heat olive oil in a pan over medium-high heat and sear the roast on all sides until browned (about 3 minutes per side).
- Caramelize the onions: In the same pan, add sliced onions and sauté over medium heat for about 15-20 minutes until golden brown.
- Assemble: In a slow cooker, place half of the caramelized onions at the bottom, add the seared roast, sprinkle thyme and bay leaf, then top with remaining onions. Pour beef broth over everything.
- Cook: Cover and cook on low for 8 hours (or high for 4 hours) until meat is fork-tender.
- Add cheese: During the last few minutes of cooking, sprinkle shredded Gruyère cheese on top and let it melt.
- Serve: Plate the pot roast with gravy and serve alongside mashed potatoes or crusty bread.
