  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder

  • 1/2 tsp ginger
  • 1/2 tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 tbsp milk

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together oats, flour, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, cream together brown sugar, granulated sugar, and pumpkin puree until smooth. Add eggs and vanilla extract while mixing.
  4. Gradually combine dry ingredients into the wet mixture until just incorporated.
  5. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them two inches apart.
  6. Bake for about 10 minutes or until edges are lightly golden. Cool completely on wire racks.
  7. For icing, whisk powdered sugar and milk until smooth. Drizzle over cooled cookies.
