  • 1 cup canned pumpkin puree
  • ½ cup honey or maple syrup
  • ½ cup almond butter (or peanut butter)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix pumpkin puree, honey or maple syrup, almond butter, and vanilla until smooth.
  3. In another bowl, whisk rolled oats, baking powder, salt, cinnamon, and nutmeg.
  4. Combine the wet and dry mixtures until just combined; do not overmix.
  5. Pour the mixture into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely. Cut into squares.
