  • 12 large pasta shells
  • 1 cup ricotta cheese
  • 2 cups fresh spinach (chopped)
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce (plus more for serving)
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Boil salted water in a large pot. Cook the jumbo pasta shells until al dente, about 8 minutes. Drain and let cool slightly.
  3. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add chopped spinach and cook until wilted, about 2 minutes.
  4. In a mixing bowl, combine ricotta cheese, sautéed spinach, grated Parmesan, salt, and pepper until well blended.
  5. Carefully fill each pasta shell with the ricotta mixture and place them seam side up in the prepared baking dish.
  6. Pour marinara sauce generously over the stuffed shells. Cover with aluminum foil and bake for 25 minutes; remove foil during the last 5 minutes to allow for bubbling.
