  • 1 medium onion, diced

  • 28 oz canned crushed tomatoes
  • 4 cups beef broth (or chicken broth)
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add a splash of olive oil. Cook the ground beef or sausage with the diced onion until browned and fragrant (about 5 minutes). Stir in minced garlic and sauté for another minute.
  2. Pour in crushed tomatoes and beef broth. Add Italian seasoning, salt, and pepper. Simmer gently for about 10 minutes.
  3. Break lasagna noodles into bite-sized pieces and stir them into the pot. Cook until noodles are tender (approximately 8-10 minutes).
  4. Remove from heat and mix in dollops of ricotta cheese.
