  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 1 tbsp Italian seasoning
  • 2 cups fresh spinach (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté onion, carrots, and celery until softened (about 5 minutes).
  2. Add chicken breasts along with 3 cups of chicken broth, salt, pepper, and Italian seasoning. Cover and simmer for about 15 minutes until the chicken is cooked through.
  3. Remove the chicken from the pot, shred it using forks, and return to the pot.
  4. Stir in softened cream cheese until melted; then add remaining broth while stirring continuously until smooth.
  5. If desired, add fresh spinach and simmer for another 5 minutes to combine flavors.
  6. Serve hot with freshly grated Parmesan cheese on top.
