- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 8 oz cream cheese, softened
- 1 tbsp Italian seasoning
- 2 cups fresh spinach (optional)
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, drizzle olive oil and sauté onion, carrots, and celery until softened (about 5 minutes).
- Add chicken breasts along with 3 cups of chicken broth, salt, pepper, and Italian seasoning. Cover and simmer for about 15 minutes until the chicken is cooked through.
- Remove the chicken from the pot, shred it using forks, and return to the pot.
- Stir in softened cream cheese until melted; then add remaining broth while stirring continuously until smooth.
- If desired, add fresh spinach and simmer for another 5 minutes to combine flavors.
- Serve hot with freshly grated Parmesan cheese on top.
