  • 1 lb ground beef or sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28 oz can fire-roasted diced tomatoes
  • 4 cups low-sodium chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. In a skillet over medium heat, brown the ground beef or sausage until fully cooked. Drain excess fat and set aside.
  2. Sauté chopped onion and minced garlic in the same skillet until fragrant (about 3 minutes).
  3. Transfer meat mixture to your crockpot; stir in diced tomatoes, broth, salt, pepper, and Italian seasoning.
  4. Break lasagna noodles into bite-sized pieces and add them to the crockpot.
  5. Cover and cook on low for about 4 hours or until pasta is tender.
  6. Mix ricotta cheese with parsley (if desired). Just before serving, dollop this mixture into each bowl of soup and top with shredded mozzarella.
