- 4 medium Yukon Gold potatoes, diced (about 2 lbs)
- 2 medium carrots, sliced
- 2 stalks celery, chopped
- 1 medium onion, chopped

- 6 cups low-sodium chicken broth
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
