  • 34 boneless skinless chicken breasts (about 1 lb)
  • 4 medium Yukon Gold potatoes, diced (about 2 lbs)
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and chopping the vegetables.
  2. In a large pot over medium heat, add 2 tbsp olive oil. Sauté chopped onions and minced garlic until fragrant (about 2 minutes).
  3. Add the boneless chicken breasts and cook for about 5 minutes until slightly browned.

  5. Pour in the chicken broth and add thyme and bay leaves. Bring to a boil, then reduce heat and simmer for 25 minutes.
