  • 2 tbsp ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with nonstick spray.
  2. Wash and halve the baby potatoes. Optionally, quarter them for smaller pieces.
  3. In a large bowl, toss the halved potatoes with olive oil, ranch seasoning, salt, and pepper until well coated.
  4. Spread the seasoned potatoes evenly on the prepared baking sheet.
  5. Roast in the oven for 25-30 minutes or until golden brown and fork-tender, shaking halfway through cooking.
  6. Remove from the oven, sprinkle shredded cheese over the hot potatoes, and return to the oven for an additional 5-7 minutes until melted.
