Ingredients

  • 2 cups short-grain sushi rice
  • 4 sheets nori
  • 1 cup imitation crab meat (or lump crab)
  • 1 medium cucumber, julienned
  • 1 ripe avocado, sliced
  • 3 tablespoons sushi vinegar

Instructions

  1. Rinse the sushi rice under cold water until clear. Cook according to package instructions and let cool slightly before mixing in sushi vinegar.
  2. While the rice cools, slice the cucumber and avocado into thin strips.
  3. On a bamboo mat covered with plastic wrap, place a nori sheet shiny side down. Spread an even layer of sushi rice over the nori, leaving an inch at the top.
  4. Lay strips of avocado, cucumber, and imitation crab horizontally across the center.
  5. Roll tightly using the bamboo mat to help form the roll. Seal the edge with water.
  6. Slice into bite-sized pieces with a sharp knife dipped in water and serve with soy sauce.
