  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup Italian breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 1 cup fresh mozzarella cheese, sliced
  • 2 cups marinara sauce
  • 1 tablespoon fresh basil, chopped
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper on both sides. Dredge the chicken in flour, dip into beaten eggs, then roll in a mixture of breadcrumbs and grated Parmesan until evenly coated.
  3. Place the breaded chicken in the baking dish and bake for about 25 minutes or until golden brown and cooked through.
  4. Remove from the oven and top each piece with marinara sauce and sliced mozzarella. Return to the oven for an additional 10-15 minutes until the cheese is bubbly and golden.
