Description

Bacon Cheeseburger Soup is a deliciously creamy and hearty dish that brings the classic flavors of a cheeseburger into a comforting bowl. With savory ground beef, crispy bacon, and melted cheddar cheese, this soup is perfect for chilly nights or when you’re craving something indulgent.

Ingredients

Scale
  • 1 lb lean ground beef
  • 6 slices thick-cut bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium russet potatoes, diced
  • 4 cups low-sodium beef broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard

Instructions

  1. In a large pot over medium heat, cook chopped bacon until crispy. Remove and drain on paper towels.
  2. In the same pot, sauté diced onions until softened; add minced garlic and cook until fragrant.
  3. Add ground beef; cook until browned, breaking it up as you go.
  4. Stir in diced potatoes and pour in beef broth. Simmer for about 15 minutes until potatoes are tender.
  5. Lower the heat, then mix in heavy cream, cheddar cheese, and Dijon mustard until melted and smooth.
  6. Serve hot with crispy bacon bits sprinkled on top.
