  • 1 ½ cups almond flour (150g)
  • 2 large eggs
  • ½ tsp baking soda
  • ½ cup honey or maple syrup (120ml)
  • 1 tsp cinnamon (optional)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth yet slightly chunky.
  3. Mix in eggs, honey or maple syrup, vanilla extract, and cinnamon until well combined.
  4. In another bowl, combine almond flour and baking soda. Gradually add this dry mixture to the wet ingredients and stir until just mixed—do not overmix.
  5. Pour the batter into the prepared loaf pan and bake for 45-50 minutes or until a toothpick comes out clean from the center.
  6. Allow to cool in the pan for about ten minutes before transferring to a wire rack. Slice while warm and enjoy!
