  • 1 cup fresh cherries (pitted and halved)
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. Spread halved cherries on a baking sheet and roast for about 15 minutes until caramelized.
  3. Melt butter in a saucepan over low heat. Stir in sugar until well combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, cocoa powder, and flour until just combined.
  5. Fold in half of the roasted cherries into the batter, reserving some for topping. Pour into the prepared pan.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool before cutting into squares and topping with remaining cherries.
