Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- Spread halved cherries on a baking sheet and roast for about 15 minutes until caramelized.
- Melt butter in a saucepan over low heat. Stir in sugar until well combined.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, cocoa powder, and flour until just combined.
- Fold in half of the roasted cherries into the batter, reserving some for topping. Pour into the prepared pan.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool before cutting into squares and topping with remaining cherries.
