Instructions
- Cook bacon in a skillet over medium heat until crispy. Transfer to paper towels; reserve grease.
- In the same skillet, sauté onion until translucent; add garlic and cook until fragrant.
- In a crockpot, combine potatoes, sautéed onion and garlic, cooked bacon (reserve some for garnish), and chicken broth.
- Cook on low for 6 hours or high for 3 hours until potatoes are tender.
- Mash some potatoes in the crockpot to thicken soup; stir in heavy cream until well combined.
