Ingredients

  • 2 lbs russet potatoes, peeled and diced
  • 6 strips thick-cut bacon, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup green onions, sliced (for garnish)

Instructions

  1. Cook bacon in a skillet over medium heat until crispy. Transfer to paper towels; reserve grease.
  2. In the same skillet, sauté onion until translucent; add garlic and cook until fragrant.
  3. In a crockpot, combine potatoes, sautéed onion and garlic, cooked bacon (reserve some for garnish), and chicken broth.
  4. Cook on low for 6 hours or high for 3 hours until potatoes are tender.
  5. Mash some potatoes in the crockpot to thicken soup; stir in heavy cream until well combined.
  6. Serve hot topped with cheddar cheese and green onions.
