  • 2 medium sweet potatoes (400g), peeled and cubed
  • 1 red bell pepper (150g), chopped
  • 1 medium yellow onion (100g), sliced
  • 1 can black beans (15 oz or 425g), drained and rinsed
  • 2 tbsp extra virgin olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet over medium heat, heat olive oil.
  2. Add cubed sweet potatoes and sauté for about 5 minutes until golden brown.
  3. Add sliced onion and chopped red bell pepper to the skillet. Cook for an additional 5 minutes until fragrant.
  4. Stir in chili powder, cumin, salt, and pepper; mix well.
  5. Gently fold in the black beans until heated through.
  6. Remove from heat and garnish with fresh cilantro before serving.
