  • 1 cup shredded cheddar or feta cheese
  • 1 cup diced bell peppers (mixed colors)
  • 2 cups fresh spinach
  • 1 medium onion, diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil (for sautéing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil and sauté diced onions until translucent. Add bell peppers and spinach; cook until tender, about five minutes.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper until frothy.
  4. Stir in the sautéed veggies and half of the cheese into the egg mixture.
  5. Pour the mixture into the greased baking dish and sprinkle the remaining cheese on top. Bake for 25-30 minutes until set; a toothpick should come out clean when inserted.
