- 1 cup shredded cheddar or feta cheese
- 1 cup diced bell peppers (mixed colors)
- 2 cups fresh spinach
- 1 medium onion, diced

- 1/2 tsp black pepper
- 2 tbsp olive oil (for sautéing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with nonstick spray.
- In a skillet over medium heat, add olive oil and sauté diced onions until translucent. Add bell peppers and spinach; cook until tender, about five minutes.
- In a large bowl, whisk together eggs, milk, salt, and pepper until frothy.
- Stir in the sautéed veggies and half of the cheese into the egg mixture.
- Pour the mixture into the greased baking dish and sprinkle the remaining cheese on top. Bake for 25-30 minutes until set; a toothpick should come out clean when inserted.
