- 1 lb ground beef or pork
- 1/2 cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 cup carrots, diced
- 1 cup celery, diced
- 5 cups low-sodium chicken broth
- 4 cups fresh spinach
- 1/2 cup grated Parmesan cheese
Instructions
- In a large bowl, mix the ground meat, breadcrumbs, egg, garlic, parsley, salt, and pepper. Form into small meatballs (about 1 inch).
- Heat olive oil in a large pot over medium heat. Brown meatballs in batches until golden (about 5 minutes). Remove from the pot.
- In the same pot, sauté diced onions, carrots, and celery until softened (about 5 minutes).
- Add chicken broth and bring to a simmer. Return meatballs to the pot along with spinach and cook for about 15 minutes.
- Stir in grated Parmesan cheese just before serving and adjust seasoning if needed.
- Serve hot with extra Parmesan on top.
