  • 1 lb ground beef or pork
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 5 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large bowl, mix the ground meat, breadcrumbs, egg, garlic, parsley, salt, and pepper. Form into small meatballs (about 1 inch).
  2. Heat olive oil in a large pot over medium heat. Brown meatballs in batches until golden (about 5 minutes). Remove from the pot.
  3. In the same pot, sauté diced onions, carrots, and celery until softened (about 5 minutes).
  4. Add chicken broth and bring to a simmer. Return meatballs to the pot along with spinach and cook for about 15 minutes.
  5. Stir in grated Parmesan cheese just before serving and adjust seasoning if needed.
  6. Serve hot with extra Parmesan on top.
