- 1/2 cup breadcrumbs
- 1/4 cup fresh parsley, chopped
- 3 garlic cloves, minced
- 2 tbsp lemon juice (freshly squeezed)
- 1 cup low-sodium chicken broth
- Zest of 1 lemon
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). In a large bowl, combine ground meat, breadcrumbs, parsley, garlic, half of the lemon juice, salt, and pepper. Mix until well combined.
- Shape the mixture into golf ball-sized meatballs (about 25).
- Place meatballs on a parchment-lined baking sheet and bake for 20 minutes until browned.
- While baking, prepare the sauce by simmering chicken broth, remaining lemon juice and zest, honey, salt, and pepper in a saucepan over medium heat for 5 minutes until slightly thickened.
- Transfer baked meatballs into the sauce and simmer together for an additional 5 minutes.
- Serve hot with extra sauce drizzled on top.
