  • 6 soft flour or corn tortillas
  • 1 (15 oz) can refried beans
  • 2 tbsp taco seasoning
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro (for topping)
  • 1/4 cup sliced jalapeños (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). In a skillet, cook the ground beef over medium heat until browned; drain excess fat.
  2. Stir in taco seasoning and a splash of water; simmer for about 5 minutes.
  3. Grease a baking dish and layer half of the tortillas at the bottom. Spread half of the refried beans and half of the beef mixture on top, then sprinkle with 1 cup of cheese. Repeat layers.
  4. Top with remaining tortillas, beans, beef mixture, and cheese. Cover with foil and bake for 25-30 minutes until bubbly.
  5. Broil for an additional minute if desired for extra melty cheese. Let cool slightly before serving with sour cream, cilantro, and jalapeños.
