- 2 tbsp olive oil
Instructions
- Dice the chicken into bite-sized pieces. Chop the carrots and mince the garlic.
- Heat olive oil in a large pot over medium heat. Sauté the chicken with salt and pepper until golden brown (5-7 minutes).
- Add minced garlic and diced carrots; sauté for another 2 minutes until fragrant.
- Pour in the chicken broth, bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in the gnocchi and heavy cream; cook until the gnocchi are tender (about 3 minutes).
- Add spinach until wilted (about 1 minute). Serve hot.
