- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 can (15 oz) black beans, rinsed and drained
- 4 cups low-sodium chicken broth
- 1 cup bell peppers, chopped (any color)
- 2 tbsp taco seasoning
- ½ cup sour cream
- ¼ cup fresh cilantro, chopped
Instructions
- In a large pot over medium heat, add olive oil and sauté minced garlic and diced bell peppers until fragrant (about 3 minutes).
- Add the chicken breasts and enough chicken broth to cover them halfway. Season lightly with salt and pepper; simmer for about 10 minutes.
- Remove cooked chicken, shred it with two forks, then return it to the pot along with diced tomatoes and black beans.
- Stir in taco seasoning and any remaining chicken broth needed for desired consistency; simmer for another 10 minutes.
- Adjust seasoning before serving hot in bowls garnished with sour cream and cilantro.
