  • 8 oz flat rice noodles
  • 2 large eggs
  • 2 tbsp vegetable oil
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp tamarind paste
  • 1 tbsp brown sugar

Instructions

  1. Slice chicken breasts into thin strips and soak rice noodles in hot water according to package instructions until pliable.
  2. In a bowl, whisk together soy sauce, tamarind paste, and brown sugar; set aside.
  3. Heat vegetable oil in a skillet over medium-high heat. Cook chicken until golden brown (about 5 minutes), then remove from skillet.
  4. In the same skillet, add soaked noodles and half of the sauce. Stir-fry until noodles absorb flavor.
  5. Push noodles aside and scramble eggs in the skillet before mixing with the noodles. Add any additional chopped veggies if desired.
