  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 cups wide egg noodles
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, add olive oil and sauté chopped onions until translucent (about 3 minutes). Add diced carrots and celery; cook for another 5 minutes.
  2. Stir in minced garlic and cook for 1 minute until fragrant. Add chicken breasts and enough chicken broth to cover everything by an inch.
  3. Bring to a boil then reduce heat. Cover and simmer for about 20 minutes until the chicken is cooked through.
  4. Remove chicken from the pot, shred it using two forks, then return it to the pot along with egg noodles. Cook uncovered for about 10 minutes until noodles are tender.
  5. Stir in chopped parsley before serving hot.
