  • 1 ½ cups Bomba or Calasparra rice
  • 1 pinch saffron threads
  • 1 lb seafood mix (shrimp, mussels, calamari)
  • 2 chicken thighs (skin-on), chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 4 cups low-sodium chicken broth

Instructions

  1. Prepare all ingredients: chop chicken thighs, dice vegetables, and gather seafood.
  2. In a large paella pan or skillet over medium heat, sauté onion and garlic in olive oil until translucent. Add bell peppers and cook until soft.
  3. Add chicken pieces; season with salt and pepper. Brown on all sides for about 5 minutes.
  4. Stir in rice to toast for 2 minutes then add saffron steeped in warm broth.
  5. Pour in enough chicken broth to cover everything by about an inch (approximately 4 cups). Bring to a simmer and layer seafood on top.
  6. Cover with a lid or foil; reduce heat and simmer for 20-25 minutes until rice is cooked and seafood opens up.
